  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Add onion and garlic, sautéing until translucent.
  3. Stir in bell pepper, cooking for another 3 minutes.
  4. Add lentils, diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper.
