- 1 cup heavy cream
- 1/2 cup whole milk
- 4 large egg yolks
- 1/4 cup granulated sugar
- 1/4 cup passion fruit puree
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar
- Preheat your oven to 325°F (160°C).
- In a saucepan, combine cream, milk, and passion fruit puree, heating until just under a boil.
- In a bowl, whisk egg yolks and granulated sugar until smooth.
- Slowly add the hot cream mixture to the egg mixture, stirring constantly.
- Add vanilla extract and mix well.
- Pour the mixture into ramekins and place them in a baking dish.
- Fill the baking dish with water until it reaches halfway up the sides of the ramekins.
- Bake for about 30-35 minutes, or until the edges are set but the center is slightly jiggly.
- Remove from the oven and let cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle brown sugar on top and caramelize with a torch or broil until golden brown.
