  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup passionfruit pulp
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the crushed graham crackers with melted butter and press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, then mix in the sour cream, passionfruit pulp, and vanilla extract.
  5. Pour the cheesecake filling over the crust, then swirl additional passionfruit pulp on top.
  6. Bake for 45-50 minutes or until set. Allow to cool before refrigerating for at least 4 hours.
