Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the sweet potato mixture and stir until well combined. Fold in the chopped pecans.
  5. In a separate bowl, mix the topping ingredients: brown sugar, flour, cold butter, cinnamon, and chopped pecans until crumbly.
  6. Divide the muffin batter evenly into the prepared muffin tin and sprinkle the topping mixture over each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes in the tin before transferring to a wire rack to cool completely.
