Pecan Pie Cheesecake

A delightful combination of classic pecan pie and creamy cheesecake that will satisfy any sweet tooth.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • ½ cup light corn syrup
  • ¼ cup brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Pour cream cheese mixture over the crust.
  6. In another bowl, mix pecans, corn syrup, and brown sugar; carefully pour on top of the cheesecake mixture.
  7. Bake for 70 minutes or until set. Cool in the oven with the door ajar.
  8. Refrigerate for at least 4 hours before serving.
