- 4 slices turkey bacon
- 1 onion, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 2 cups cooked roast beef, shredded
- 1 cup beef broth
- 1 cup provolone cheese, shredded
- 2 tablespoons olive oil
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and chop.
- Add onions and green bell peppers to the skillet; sauté until soft.
- Stir in minced garlic and cook for another minute.
- Add shredded roast beef and beef broth; bring to a simmer.
- Stir in cooked pasta and chopped turkey bacon; mix well.
- Sprinkle with provolone cheese; cover and let melt.
