- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups pumpkin puree
- Preheat your oven to 350°F (175°C) and grease and flour two round cake pans.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another large mixing bowl, beat together the granulated sugar, brown sugar, and oil until smooth.
- Add the eggs one at a time, mixing well after each addition, then stir in the pumpkin puree.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
- For the frosting, beat together cream cheese and butter until smooth, then blend in powdered sugar and cinnamon.
- Once the cakes are completely cooled, spread frosting between layers and on top of the cake.
Notes
- For an extra touch, sprinkle chopped pecans on top of the frosting.
