Pumpkin Cake with Cinnamon Cream Cheese Frosting

A deliciously moist pumpkin cake topped with a rich cinnamon cream cheese frosting.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two round cake pans.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another large mixing bowl, beat together the granulated sugar, brown sugar, and oil until smooth.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the pumpkin puree.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  9. For the frosting, beat together cream cheese and butter until smooth, then blend in powdered sugar and cinnamon.
  10. Once the cakes are completely cooled, spread frosting between layers and on top of the cake.

Notes

  • For an extra touch, sprinkle chopped pecans on top of the frosting.
