  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin, sugars, and oil until well combined.
  3. Beat in eggs one at a time.
  4. In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fill muffin cups 2/3 full with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool completely before frosting.
  9. For the frosting, beat cream cheese and butter together, then slowly add powdered sugar and vanilla until smooth.
  10. Frost the cooled muffins and serve.

Notes

  • For extra flavor, add chocolate chips or nuts to the batter.
