- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together pumpkin, sugars, and oil until well combined.
- Beat in eggs one at a time.
- In a separate bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fill muffin cups 2/3 full with batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool completely before frosting.
- For the frosting, beat cream cheese and butter together, then slowly add powdered sugar and vanilla until smooth.
- Frost the cooled muffins and serve.
