  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup powdered sugar
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pumpkin puree and eggs, mixing well.
  4. In another bowl, whisk together the flour, oats, baking soda, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until combined.
  6. Drop spoonfuls of dough onto a lined baking sheet and bake for 12-15 minutes.
  7. Let the cookies cool completely.
  8. For the filling, beat together the softened cream cheese, powdered sugar, and vanilla until smooth.
  9. Spread the filling between two cookies to make sandwiches.
