Pumpkin Spice Banana Oat Muffins Recipe

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk (or any milk of choice)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 cup walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas.
  3. Add pumpkin puree, honey or maple syrup, and almond milk to the bowl and mix well.
  4. In another bowl, mix rolled oats, baking powder, baking soda, pumpkin pie spice, and salt.
  5. Combine the wet and dry ingredients until just mixed. Fold in walnuts if using.
  6. Fill each muffin cup with the batter about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Notes

  • Store any leftovers in an airtight container.
  • These muffins freeze well; just thaw when ready to eat.
