Quick Veggie & Tofu Stir Fry

Ingredients

  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 2 cups firm tofu, cubed
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon sesame oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  2. Add the cubed tofu and cook until golden brown on all sides.
  3. Add the vegetables and stir-fry for about 5-7 minutes until tender.
  4. Pour in the soy sauce and sesame oil and stir to coat everything evenly.
  5. Serve warm over cooked rice or enjoy as is.

Notes

  • For added flavor, you can sprinkle sesame seeds on top before serving.
