  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 2 cups shredded coconut
  • 1 cup chocolate frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add butter, milk, eggs, and vanilla to the dry ingredients and mix until smooth.
  4. Fold in the raspberries gently.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow to cool before cutting into squares.
  7. Dip each square into chocolate frosting and roll in shredded coconut.
  8. Let set before serving.

Notes
