Ratatouille Soup

A warm and comforting Ratatouille Soup that combines the flavors of summer vegetables in a savory broth.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, chopped
  • 1 eggplant, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until soft.
  3. Add the bell pepper, zucchini, and eggplant; cook for 5 minutes.
  4. Stir in the diced tomatoes, vegetable broth, thyme, and basil.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  6. Season with salt and pepper before serving.

Notes

  • For an extra kick, add a pinch of red pepper flakes.
