Rich Chicken Stroganof

A rich and creamy chicken stroganoff recipe featuring indulgent turkey bacon.

Ingredients

  • 1 pound chicken breasts
  • 4 slices turkey bacon
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté onion and garlic until translucent.
  3. Add mushrooms and cook until softened.
  4. Cut the chicken into bite-sized pieces and add to the skillet. Cook until no longer pink.
  5. Sprinkle flour over the mixture, stirring to combine.
  6. Pour in the chicken broth, stirring until the sauce thickens.
  7. Add sour cream and paprika, mixing well.
  8. Season with salt and pepper to taste.
  9. Return the turkey bacon to the skillet.
  10. Serve warm over egg noodles or rice.

Notes

  • For a lighter version, you can use low-fat sour cream.
  • Save any leftovers in an airtight container for up to 3 days.
