This delicious pizza combines the sweetness of roast pumpkin with savory caramelized onions and crunchy walnuts, creating a perfect blend of flavors.

Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 2 large onions, sliced
  • 1 cup walnuts, roughly chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 pre-made pizza crust
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the pumpkin cubes with olive oil, salt, black pepper, and thyme, then spread on a baking sheet.
  3. Roast the pumpkin in the preheated oven for 25-30 minutes until tender.
  4. In a skillet, sauté the sliced onions over medium heat until caramelized, about 15 minutes.
  5. On a pizza crust, layer the roasted pumpkin, caramelized onions, walnuts, and mozzarella cheese.
  6. Bake in the oven according to the pizza crust instructions, until the cheese is melted and bubbly.
  7. Slice and serve warm.
