Roasted Brussels Sprouts with Pomegranate-Balsamic Glaze

Delicious roasted Brussels sprouts glazed with a tangy pomegranate-balsamic reduction.

  • 1 pound Brussels sprouts
  • 1/4 cup pomegranate juice
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1/2 cup pomegranate seeds

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut them in half.
  3. In a bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  4. Spread on a baking sheet and roast for 20-25 minutes, until golden brown.
  5. In a small saucepan, combine pomegranate juice, balsamic vinegar, and honey. Simmer until reduced by half.
  6. Drizzle the glaze over roasted Brussels sprouts and top with pomegranate seeds before serving.

Notes

  • For extra flavor, add chopped garlic before roasting.
  • Feel free to adjust the sweetness of the glaze by adding more or less honey.
