- 1 pound Brussels sprouts
- 1/4 cup pomegranate juice
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
- 1/2 cup pomegranate seeds
- Preheat the oven to 400°F (200°C).
- Trim the Brussels sprouts and cut them in half.
- In a bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 20-25 minutes, until golden brown.
- In a small saucepan, combine pomegranate juice, balsamic vinegar, and honey. Simmer until reduced by half.
- Drizzle the glaze over roasted Brussels sprouts and top with pomegranate seeds before serving.
Notes
- For extra flavor, add chopped garlic before roasting.
- Feel free to adjust the sweetness of the glaze by adding more or less honey.
