Ingredients

  • 2 cups roasted pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, heat some oil over medium heat and sauté the onion until translucent.
  2. Add the garlic and ginger and cook until fragrant.
  3. Stir in the spices and cook for another minute.
  4. Add the red lentils and vegetable broth, bring to a boil.
  5. Reduce the heat and simmer until the lentils are tender.
  6. Mix in the roasted pumpkin puree and season with salt.
  7. Serve hot, garnished with cilantro.
