Roasted Pumpkin & Garlic Pasta

Ingredients

  • 2 cups roasted pumpkin puree
  • 1 head garlic, roasted
  • 12 ounces pasta of choice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • ¼ cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread pumpkin on a baking sheet and roast for about 25 minutes until tender.
  3. In the same oven, wrap garlic in foil and roast alongside the pumpkin until soft.
  4. Cook pasta according to package instructions, then drain.
  5. In a large bowl, combine the roasted pumpkin puree and roasted garlic, then mix in olive oil, salt, pepper, and nutmeg.
  6. Toss the cooked pasta with the pumpkin mixture until well coated.
  7. Serve topped with parmesan cheese and parsley.
