Roasted Pumpkin with Yogurt Sauce and Pine Nuts

A delightful roasted pumpkin dish served with creamy yogurt sauce and topped with crunchy pine nuts.

Ingredients

  • 1 medium pumpkin
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 1/2 cup pine nuts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the pumpkin in half and remove the seeds.
  3. Drizzle the olive oil over the pumpkin and sprinkle with salt and pepper.
  4. Place the pumpkin halves cut side down on a baking sheet and roast for 30-35 minutes until tender.
  5. While the pumpkin is roasting, toast the pine nuts in a skillet over medium heat until golden.
  6. Once the pumpkin is done, let it cool slightly, then scoop the flesh and mix it with yogurt and thyme.
  7. Serve the pumpkin mixture topped with toasted pine nuts.

Notes

  • For extra flavor, add garlic to the yogurt sauce.
  • Feel free to substitute the pine nuts with walnuts or almonds.
