Ingredients

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 2 tablespoons balsamic vinegar
  • 1 lemon juice and zest
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix balsamic vinegar, lemon juice, garlic, oregano, olive oil, salt, and pepper.
  3. Marinate the chicken in the mixture for at least 30 minutes.
  4. Place the chicken and potatoes on a sheet pan.
  5. Drizzle the remaining marinade over the potatoes.
  6. Bake for 30-35 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Serve warm and enjoy!

Notes

  • For extra crispy skin, broil for the last 2-3 minutes.
