- 1 pound chicken breast
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 7 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 package (16 ounces) gnocchi
- 1 cup heavy cream
- 3 cups spinach, chopped
- Salt and pepper to taste
- Heat the olive oil in a skillet over medium heat. Add the onion, garlic, carrots, and celery and sauté until soft.
- Transfer the sautéed vegetables to the slow cooker. Add the chicken, broth, thyme, and oregano.
- Cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the slow cooker.
- Add the gnocchi and heavy cream, and cook for an additional 30 minutes on high.
- Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
