Slow Cooker Chicken Gnocchi Soup

  • 1 pound chicken breast
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 7 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 package (16 ounces) gnocchi
  • 1 cup heavy cream
  • 3 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the onion, garlic, carrots, and celery and sauté until soft.
  2. Transfer the sautéed vegetables to the slow cooker. Add the chicken, broth, thyme, and oregano.
  3. Cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the slow cooker.
  5. Add the gnocchi and heavy cream, and cook for an additional 30 minutes on high.
  6. Stir in the spinach and cook until wilted. Season with salt and pepper to taste.

Notes

  • You can substitute turkey for chicken for a different flavor.
  • Add more vegetables like bell peppers or zucchini for extra nutrition.
