Slow Cooker Cream Cheese Crack Chicken Chili

A hearty chili made with cream cheese, chicken, and turkey bacon.

  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese
  • 6 slices turkey bacon, cooked and crumbled
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. In a slow cooker, combine chicken breasts, cream cheese, turkey bacon, black beans, corn, diced tomatoes, ranch seasoning, chicken broth, garlic powder, onion powder, and chili powder.
  2. Stir until well mixed.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Before serving, shred the chicken with two forks and mix well.
  5. Serve hot, garnished with additional turkey bacon and cheese if desired.

Notes

  • This chili can be topped with shredded cheese, sour cream, or sliced green onions.
  • For a spicier version, add jalapeños or hot sauce.
