Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, mix well.
  5. Stir in the pumpkin puree until fully combined.
  6. Gradually add the dry ingredients to the wet ingredients until a dough forms.
  7. Drop tablespoons of dough onto a lined baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly browned.
  9. Let cool completely before frosting.
  10. To make the frosting, beat the softened cream cheese with the powdered sugar, milk, and vanilla until smooth.
  11. Spread the frosting on cooled cookies.
