Southwest Chicken Alfredo

A delicious and indulgent take on traditional Alfredo pasta, featuring a Southwest twist.

Ingredients

Scale
  • 1 pound chicken breast, diced
  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with chili powder, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
  3. Reduce heat and add heavy cream to the skillet with the chicken. Stir well and bring to a gentle simmer.
  4. Gradually stir in the Parmesan cheese until melted and the sauce is smooth.
  5. Add the cooked fettuccine to the sauce and toss to coat evenly.
  6. Sprinkle with chopped cilantro before serving.

Notes

  • For extra spice, consider adding diced jalapeños to the chicken while cooking.
  • This dish can be made ahead and reheated, but may need a splash of water or cream to loosen the sauce.
