  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add sun-dried tomatoes and spinach to the skillet, cooking until spinach wilts.
  4. Pour in heavy cream, stirring to combine. Add salt, pepper, and red pepper flakes, if using.
  5. Let the sauce simmer for a few minutes until it thickens slightly. Stir in Parmesan cheese.
  6. Add the cooked spaghetti to the sauce, tossing to coat evenly.
  7. Serve hot, garnished with additional Parmesan cheese if desired.
