Spicy beef noodle soup

A comforting and spicy beef noodle soup recipe that you can easily prepare at home.

  • 1 pound beef shank, thinly sliced
  • 4 cups beef broth
  • 2 cups water
  • 200 grams rice noodles
  • 1 tablespoon soy sauce
  • 2 tablespoons chili paste
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 onion, sliced
  • 2 green onions, chopped
  • 1 bell pepper, sliced
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. In a pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  2. Add the beef shank slices and cook until browned.
  3. Pour in the beef broth and water, and bring to a boil.
  4. Stir in the soy sauce and chili paste, then reduce the heat and let it simmer for 45 minutes.
  5. In the meantime, cook the rice noodles according to package instructions and set aside.
  6. After 45 minutes, add the bell pepper and green onions to the soup, and simmer for another 5-10 minutes.
  7. Serve the soup over the cooked rice noodles.

Notes

  • For extra spice, add sliced jalapeños before serving.
  • Use fresh herbs like cilantro for garnish to enhance flavor.
