- 2 pounds chicken thighs
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Sriracha
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 can (14 oz) coconut milk
- 2 cups jasmine rice
- 2 cups water
- 1/2 cup chopped green onions
- 1/4 cup cilantro
- In a bowl, mix maple syrup, soy sauce, Sriracha, garlic powder, and paprika. Marinate chicken for at least 30 minutes.
- In a saucepan, combine coconut milk, water, and rice. Bring to boil, then reduce heat and simmer until rice is cooked.
- Cook marinated chicken on a grill or skillet until golden and cooked through.

Notes
