Spicy Maple Chicken & Coconut Rice

A delicious blend of spicy and sweet flavors with tender chicken served over creamy coconut rice.

  • 2 pounds chicken thighs
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 can (14 oz) coconut milk
  • 2 cups jasmine rice
  • 2 cups water
  • 1/2 cup chopped green onions
  • 1/4 cup cilantro

Instructions

  1. In a bowl, mix maple syrup, soy sauce, Sriracha, garlic powder, and paprika. Marinate chicken for at least 30 minutes.
  2. In a saucepan, combine coconut milk, water, and rice. Bring to boil, then reduce heat and simmer until rice is cooked.
  3. Cook marinated chicken on a grill or skillet until golden and cooked through.
  4. Serve chicken over coconut rice and garnish with green onions and cilantro.

Notes

  • Adjust the spiciness by adding more or less Sriracha.
  • For a richer flavor, let the chicken marinate overnight.
