- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, pureed
- 4 ounces cream cheese, softened
- 2 cups powdered sugar
- 2 tablespoons milk
- Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, mix all the dry ingredients together.
- In another bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla extract to the butter mixture and mix well.
- Gradually add dry ingredients to the wet mixture, alternating with strawberry puree.
- Fill cupcake liners and bake for 15-20 minutes.
- Let them cool before adding cream cheese frosting.
- To make the frosting, beat together cream cheese, powdered sugar, and milk until smooth.
- Frost the cooled cupcakes and enjoy!
