  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, pureed
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mix all the dry ingredients together.
  3. In another bowl, cream together butter and sugar until light and fluffy.
  4. Add egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add dry ingredients to the wet mixture, alternating with strawberry puree.
  6. Fill cupcake liners and bake for 15-20 minutes.
  7. Let them cool before adding cream cheese frosting.
  8. To make the frosting, beat together cream cheese, powdered sugar, and milk until smooth.
  9. Frost the cooled cupcakes and enjoy!
