  • 2 chicken thighs
  • 1 cup jasmine rice
  • 1/2 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1/2 cup green onions, chopped
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 tablespoon sesame oil
  • 1/4 cup cilantro, chopped

Instructions

  1. Cook the jasmine rice according to package instructions.
  2. In a bowl, mix the sweet chili sauce, soy sauce, and minced garlic.
  3. Marinate the chicken thighs in the sauce mixture for at least 30 minutes.
  4. Heat sesame oil in a skillet over medium heat.
  5. Add the marinated chicken thighs and cook until golden brown and cooked through.
  6. Remove the chicken from the skillet and let it rest before slicing.
  7. In the same skillet, stir-fry the sliced bell pepper and julienned carrot until tender.
  8. To serve, place rice in a bowl, top with chicken, and garnish with green onions and cilantro.
