Sweet Potato Salad

A delicious and nutritious sweet potato salad featuring turkey bacon and crunchy vegetables, perfect for any meal.

Ingredients

  • 2 cups sweet potatoes, cubed
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, diced
  • 1/2 cup corn, canned or cooked
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • salt and pepper to taste

Instructions

  1. Boil sweet potatoes in salted water until tender, about 10 minutes. Drain and let cool.
  2. In a large bowl, combine the cooled sweet potatoes, turkey bacon, bell peppers, red onion, corn, and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
