- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mini marshmallows
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, combine buttermilk, oil, eggs, and vanilla. Mix well.
- Gradually add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool before filling with mini marshmallows.
