Traditional Sernik Recipe – Polish Cheesecake

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 cups farmer’s cheese or ricotta
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large bowl, mix the cheese, sugar, vanilla, lemon juice, and salt until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the filling over the crust and smooth the top.
  6. Bake for 60-70 minutes or until the center is set.
  7. Let cool before refrigerating for at least 4 hours.
