Triple Chocolate Mousse Cake

Ingredients

  • 6 ounces semisweet chocolate, chopped
  • 6 ounces milk chocolate, chopped
  • 6 ounces white chocolate, chopped
  • 4 large eggs, separated
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the semisweet chocolate in a double boiler. Remove from heat.
  2. In a separate bowl, whisk egg yolks and sugar until pale and creamy.
  3. Fold in the melted chocolate and vanilla extract.
  4. In another bowl, whip the heavy cream to soft peaks and fold it into the chocolate mixture.
  5. In a clean bowl, beat the egg whites until stiff peaks form, then fold gently into the mixture.
  6. Layer the mousse in a cake pan and refrigerate until set.
  7. Serve chilled, garnished with chocolate shavings.

Notes

  • For extra richness, use high-quality chocolate.
