Vegan White Chocolate Raspberry Tart

  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup vegan white chocolate chips
  • 1/2 cup coconut cream
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, melted coconut oil, maple syrup, vanilla extract, and salt until combined.
  3. Press the mixture firmly into a tart pan to form the crust.
  4. Bake the crust for 10-12 minutes until set, then let it cool.
  5. In a saucepan, combine vegan white chocolate chips and coconut cream over low heat, stirring until melted and smooth.
  6. Pour the white chocolate mixture into the cooled crust and spread evenly.
  7. Top with fresh raspberries and refrigerate for at least 2 hours to set.
  8. Slice and serve chilled.
