- 1 pound chicken breast, cooked and shredded
- 4 strips turkey bacon, chopped
- 1 can white beans, drained and rinsed
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup corn kernels
- 1 jalapeño, diced (optional)
- 1 cup sour cream
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add onions and garlic; sauté until softened.
- Add the shredded chicken, turkey bacon, white beans, chicken broth, cumin, chili powder, salt, pepper, corn, and jalapeño to the pot.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Stir in the sour cream before serving.
Notes
- For a spicier chili, add more jalapeños.
