- 2 zucchinis, grated
- 4 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 whole wheat tortillas
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a bowl, mix grated zucchini with eggs, cheese, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and spread some of the zucchini mixture on half of it.
- Fold the tortilla over and cook until golden on both sides.
- Repeat with remaining tortillas and mixture.
