Zesty Zucchini Breakfast Quesadilla

A delicious and healthy way to start your day with zucchini-packed quesadillas.

Ingredients

  • 2 zucchinis, grated
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 whole wheat tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, mix grated zucchini with eggs, cheese, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Place one tortilla in the skillet and spread some of the zucchini mixture on half of it.
  4. Fold the tortilla over and cook until golden on both sides.
  5. Repeat with remaining tortillas and mixture.

Notes

  • Serve with salsa or avocado for an extra kick.
  • Customize with additional veggies or spices to taste.
